Raw Beet Salad

4 Raw Beets

2 Raw Carrots

4 Raw Swiss Chard (medium size)

1 inch Raw Ginger

2 handful Raisins

Red Wine

~~~~~~~~~~~~~~~~~~
Wash all vegetables clean. Remove tops, bottoms and blemishes when necessary.
You can use a food processor if you have one, or a simple hand grater.
Shred/grate into a large bowl the beets, carrots, swiss chard and ginger. Mix well. Then, mix in the raisins, adding enough to more or less compliment with the ginger. Finally, splash in enough red wine to moisten (not drench) it all. Keep in refrigerator.
    I made this as a side dish to go with an onion and cheese omelet, and oh, oh, oh was it delicious! Hubby said it was refreshing! Definitely a keeper and so easy to make and enjoy on a hot summer day.
    Since we’ve always like our veggies, this is one we’re looking forward to adding to our collection. Many thanks!
