Zucchini Bread

As per requested the long-awaited for…

                                   Zucchini Bread Recipe

  • ~ 3 cups of flour                                     ~ 1 teaspoon cinnamon
  • ~ 2 cups white sugar                             ~ 1 cup olive oil
  • ~ 1 teaspoon salt                                    ~ 2 cups grated zucchini (raw)
  • ~ 1 teaspoon baking soda                     ~ 3 teaspoons vanilla
  • ~ 1/4 teaspoon baking powder           ~ 3 eggs

Sift together dry ingredients in a large bowl. In a separate bowl, beat together oil, zucchini, vanilla and eggs. Pour the liquid ingredients in with the dry ingredients and mix for three minutes on high with electric mixer, or if hand mixing, until arm is ready to give out (haha). Pour into greased bread pans. Bake in 350′ oven for 1 hour.

Find nearest child, or ‘child at heart’ to lick the bowls and spoons clean 😉

Yields: 1 -2 loaves or muffins

Optional: 1/2 raisins or nuts

    One of my favourite recipes of all time. And for those who like something a little different, may I suggest semi sweet chocolate chips instead of nuts or raisins. Mmmmmmm!
