Just say Cordial around me and my taste-buds go wild, craving the fruity warmth of a sweet alcoholic drink! The fruity flavours to be made are endless! The basics of making cordial couldn’t get any easier… well, except the waiting of course.
To your desire, cordial can be made from 3 types of alcohol. They are vodka, brandy, and white wine. Since, vodka is a pure an alcohol as you can legally get and you are going to flavour it, it will not matter how expensive you buy. Brandy however, ranges according to price. White wine I have not tried myself, so you are on your own on this one. If you have tried it with white wine, please comment on your experience. I like to know what you thought.
Okay, here we go!
Making Cordial is a 2 step process.
Choose your fruits… Mix and Match
Here is my Blackberry Cordial Recipe to show you how.
1 1/2 cups blackberries
1/2 a lemon grated
3 cups vodka (or if you choose, 3 cups brandy or 2 cups vodka and 1 cup brandy or white wine)
Using a funnel, put crushed berries and grated peel and juice/pulp into a bottle that will hold 4 cups. (I like to recycle fancy liquor bottles)
Add your choice of alcohol, and set aside in a quiet place out of the sun for 2-4 weeks. (This is the hardest part!)
1 cup of sugar dissolved in 1/2 cup of boiling water.
After allotted time, strain and filter. Return liquid into the bottle and add syrup mixture. Let your cordial mature for 4-6 weeks.
(Oh! the waiting part again!)
If any cordial is not sweet enough add more syrup, honestly though, I have never had too.
And trust me…this is so worth the wait!
